If the Oracle never said to Trinity that she would fall in love with The One, would she have?

Yes.  The Oracle didn't give a description of the person Trinity would fall in love with.  Trinity loved Neo when he was still a redpill, and before knowing what he would eventually become.  

As The Oracle says:

"Being the one is like being in love.  No one can tell you you're in love, you just know it..."

She wasn't necessarily the cause for breaking the vase, just like she isn't necessarily the cause for Trinity falling in love with Neo.

He could have moved the same way he did when he knocked the vase over doing anything.
