Woah! How do you know Seraph worked for the Merv? Was it in the movies and i'm just missing something, or is it somewhere else that i haven't been?

You'll find a lot of posts covering his Merovingian background on the forums, and on the many websites that dig deeper into the backstory of the trilogy. A lot of the critical missions come up with references to his former employment as well.
If you watch Reloaded, there are a number of references made by the Merovingian and his staff to Seraph, which imply that he was once an associate who betrayed them. Digging around should give you some decent info!
